The Hooch Life Guide to American Whiskey

There are thousands of variables, mixes and matches that go into a distiller's formulation for the perfect whiskey. But it all starts with grain. High alcohol yielding corn, with a subtle, sweet spice and earthiness due to its husk. The smooth, mellow, honey-like sweetness of wheat. The complexity of rye, accenting other grains by bringing out fruit and spice. Malted barley, with its beautifully sweet and creamy feel and depth.

From there, even within a single type of whiskey, there's a world of possibilities. The depth of char on the American oak barrels directly influences color and flavor, and staves (toasted oak chips) can produce a mellow sweetness. But in the end, it's time in the barrel that contributes up to 50-70% of the whiskey's flavor. To be classified a straight whiskey, two years in the barrel is required, although four is the norm. Maturation creates depth and introduces flavors like vanilla, caramel, honey, and spice.

BOURBON WHISKEY

The big dog, caramel, vanilla, toffee and a nice earthy spice.

This is America's national spirit, and an icon of flavor on its own or in a cocktail. Aged in new charred oak barrels, its mash bill (recipe) consists of at least 51% corn, resulting in a full-bodied, sweet and spicy character. Temperance, Prohibition and a couple World Wars took its toll on the national whiskey industry, but American producers have now spent decades restoring bourbon's great tradition and international reputation.

TENNESSEE WHISKEY

Bourbon's first cousin, with a sweeter, smoother, and smoky charcoal finish.

Like Bourbon, Tennessee whiskey is at least 51% corn and aged in new charred oak barrels. But to be called Tennessee whiskey, it has to be made in the state and although not federally mandated, they also typically go through what is called the Lincoln Country Process—filtered through locally procured, sugar maple charcoal, before barrel aging.

Hot Toddy

The sweet and smooth Tennessee favorite is a welcomed partner in this winter warmer-upper. Cloves and lemon are an especially nice accent flavor to the smoked, sweet notes.

Whiskey Sour

Any sour needs a touch of sweet to balance it out. A simple and refreshing classic with fresh lemon juice, simple syrup and Tennessee whiskey does the trick.

RYE WHISKEY

A little leaner but assertive. Bitter with spicy pepper and hints of dried fruit. Think rye bread.

As America's original aged whiskey, rye was most likely the base spirit in many of the classic whiskey cocktails. As the classics have again become the "latest" trend, more and more distillers are making high quality rye—defined as at least 51% rye and aged in new charred oak.

Vieux Carré

Silky, spicy and seductive. Nothing compares to the Vieux Carré's finesse of French sophistication with American swagger.

Sazerac

It's the holiest of American cocktails, made with a sinfully spicy rye whiskey, an absinthe rinse, sugar and Pechaud's bitters. Geeky, maybe. Complex, definitely. But finding a good one to sink into is always well worth the effort.

CORN WHISKEY

Bourbon's crazy little brother, with a bad reputation that belies its sweet, spicy, earthy soul.

Moonshine, white dog, white lightning, corn squeezin's— they're all high-proof corn whiskies. Another precursor to bourbon, many were made with sugar, aged in Mason jars and made for legal trade, before going underground for illegal production and sale. Today, corn whiskies are at least 80% corn and aged in un-charred or previously used oak barrels, if it's aged at all. So corn whiskey often lacks the deep oaky flavor and color of other whiskies. Many are high in alcohol content, contain sugar, and are sometimes infused with fun and interesting flavors.

White Manhattan

Bold, raw and beautiful. Only white whiskies need apply. The flavors of the whiskey are accentuated by the lightly flavored, but full body of Lillet Blanc, and the hint of orange bitters.

Old Fashioned

You may want to hold back on the sugar depending on the type of corn whiskey. But the youngest Old Fashioned can be quite the treat when poured right.

MALT WHISKEY

Deep and complex, with a creamy, malt cereal or cookie sweetness.

Single malt Scotch must be made from a single distillery and from a single grain: barley. The Scotch single malt industry is well known, highly regulated and respected, but the American version is becoming quite the trend. American malt whiskey must be made from 51% malted barley. Distillers can also use peat (like many Scotches do) or other smoking techniques in the process, resulting in a charred or smoky flavor.

Rob Roy

Give this fine piece of work its due. Nothing tastes better than American malt whiskey with the Rob Royal treatment—simple and lush, showcasing a beautifully crafted whiskey.

Presbyterian

A nice, long sip of whiskey ginger. There's almost no better combination in the world. A bold malt whiskey stands up to the dry ginger, accented just right by a piece of lemon.

WHEAT WHISKEY

The unusual prodigy of the family, soft and smooth, with a honey-like roundness.

American distillers have a habit of striking off into unexpected directions. So while wheat has been minimally incorporated into mash bills before, few whiskies have used it as the primary grain (at least 51%, aged in new charred oak barrels). Like all prodigies, wheat whiskies shine with American independence and a delicious mellow taste that lands somewhere in between a sweet bourbon and a spicy rye.
