Celebrate Summer with Mini Peach Bourbon Pies

Shaina Olmanson, author of a new cookbook called Desserts in Jars, celebrated Pie Party 2012 (a Facebook event that invites people to post pictures of their homemade pies) with miniature peach bourbon pies baked in little glass jars. This is definitely on my list of fun things to try this weekend!
Serve these after a great backyard BBQ with a couple ounces of bourbon on the rocks.
Shaina Olmanson’s Peach Bourbon Pie
3 pounds ripe peaches, peeled, pitted, and cut into 1-inch cubes
1/2 cup sugar
2 tablespoons cornstarch
2 tablespoons all-purpose flour
2 teaspoons fresh lemon juice
1 tablespoon bourbon
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1 recipe Classic Pie Dough
