THL: What is it?
Republic Reposado tequila is made with agave grown in the lowlands of the town of Arenal, Jalisco, and then aged in Jack Daniels barrels for 8 months.
THL: Why should you try it?
Republic Tequila is crafted in small batches and is one of Mexico's few completely organic distillers. Republic Tequila use a slow process of injecting steam into a large clay oven, called a hornos, for 24-36 hours to help release the natural sugars of the agave. After cooking, the agave is shredded and juiced before the juices are left to naturally ferment over a 3-5 day process without the addition of any artificial accelerants or yeasts. The moderate maturation period of 8 months adds a round sweetness without overpowering the organic agave flavor the distillers work so hard to extract. This spirit comes in two styles of bottles, one standard, and the other a distinctive bottle that is the shape of Texas (a nod to one of the founders' home state). It's an ideal gift for the tequila loving Texans in your life.
THL: Who makes it?
Republic Tequila is produced at La Quemada distillery by Master Distiller, Sebastian Melendrez, where they also produce Republic Tequila Plata, Republic Tequila Añejo, and a line of Republic Spirit Blends. The blends, with flavors such as Pineapple Basil, Jalepeno Lime, Classic Lime, and Prickly Pear, are designed for mixing with not only tequila, but also other liquors
THL: What does it taste like?
Toasted almonds, vanilla, cinnamon, caramel, smoked orange peels.
THL: How should you drink it?
The sweet vanilla and cinnamon flavors of Repulic Reposado mix perfecty with a nice organic coffee for a Mexican Macchiato from H. Joseph Erhmann of Cocktail Ambassadors in San Francisco, California.
1-1/2 ounces Republic Reposado
2 ounces organic coffee
1/2 ounce organic agave nectar
2 ounces organic whipping cream (whipped to a medium consistency)
organic cinnamon to grate
In a mixing glass, add coffee, agave nectar, tequila and a few grates of cinnamon. Top with ice, cover, and shake for 10 seconds. Strain into a martini glass. Pour freshly whipped cream over the back of a spoon to create a layer on top of the drink, and dust with a couple more grates of cinnamon.
