THL: What is it?
Machir Bay is a single malt Scotch whisky made by Islay's newest distillery, Kilchoman. This whisky is a blend of 3, 4, and 5 year old Kilchoman whisky, which is then aged in sherry casks for 8 weeks to add flavor and color.
THL: Why should you try it?
Machir Bay is the first release from Kilchoman that will be constantly available. It was first launched in January 2012. Prior to that, Kilchoman put out seasonal releases that sold out quickly and left Scotch drinkers thirsty for more. Distillery manager John MacLellan was able to lower the production costs on this particular product to just above $50, and it's received rave reviews from critics who initially thought that Kilchoman's young whiskies were still too young.
THL: Who makes it?
Kilchoman began production in 2005 at their farm distillery on the Isle of Islay, famous for its whisky distilleries. With a small, dedicated team of local Islay natives, this distillery is able to produce whisky that, despite its young age, continues to impress drinkers and critics.

Light smoke, vegetal peat, woody caramel, and a hint of briny ocean

Do it like the Scots, with a splash of water to open up the flavors.
