THL: What is it?
Ridge Extrait d'Absinthe Verte is distilled using grand wormwood, green anise, fennel, coriander, angelica, elecampane, melissa, roman wormwood, genepi and costmary with a grain spirit base. Unlike its sister Extrait d'Absinthe Verte, it is not further colored with herbs.
THL: Why should you try it?
This absinthe is a more savory one — it has an aroma that will remind you of the beach, and a flavor that is drier with pepper spice. It is a traditional absinthe with contemporary flavors and perfect for those seeking a mushroom earthiness over a minty, vegetal earthiness characteristics of most absinthes on the market. This is the absinthe to choose if you want to pair with foods — it will go best with salty, oily proteins like oysters or salmon, and root vegetables.
THL: Who makes it?
Inspired to grow their own herbs to make tea, Jules and Joe started an herb garden and quickly realized they were also growing ingredients to make gin and absinthe. So that's what they did. They operate their small distillery in the Rocky Mountains of Kalispell, Montana.

1-1/2 ounces Ridge Extrait d'Absinthe Blanche
1/2 ounce simple syrup
club soda
kiwi fruit
cucumber
Muddle two cucumber wheels and two kiwi wheels in a double rocks glass. Add the absinthe, and top with club soda. Garnish with a wheel of unpeeled kiwi.
