THL: What is it?
CapRock Organic Vodka is distilled from organic, biodynamic grapes grown at the Jackrabbit Hill Farm, home to Peak Spirits.
THL: Why should you try it?
Lance Hanson, the distiller at Peak Spirits, is committed to the sustainable agriculture movement. So much so, that he regularly appears at events and dinners to speak about the significance of the kind of farming that he does. "We have a passion for farming," he says. "So the wines and spirits we make are things that can pay for the habit, so to speak."
THL: Who makes it?
CapRock Organic Vodka is hand-crafted by Peak Spirits at the Jack Rabbit Hill Biodynamic Farm in North Fork Gunnison Valley, Colorado. They also produce an CapRock Organic Gin, Peak Organic Eaux de Vie, and Peak Organic and Biodynamic Estate Grappas. In 2011, Peak Spirits sourced ingredients from just three growers, all located within a 10-mile radius of the distillery and all either USDA-certified organic or Demeter Biodynamic®.
