THL: What is it?

This non-traditional gin uses a unique combination of fresh and dried botanicals along with two fresh juices. The base spirits in CapRock Organic Gin are made with organic Jonathan and Braeburn apples from local farms.

THL: Why should you try it?

Peak Spirits’ commitment to sustainable local practices will make this a popular gin for drinkers looking to support “green” distillers. The distillery is an estate distillery with many spirit ingredients grown onsite. Master Distiller Lance Hanson focuses just as much on growing quality ingredients as he does on distilling them into fine products. He is well-known throughout Colorado for his talks and lectures about sustainability at events and dinners across the state.

THL: Who makes it?

CapRock Organic Gin is hand-crafted by Peak Spirits at the Jack Rabbit Hill Biodynamic Farm in North Fork Gunnison Valley, Colorado. They also produce an CapRock Organic Vodka, Peak Organic Eaux de Vie, and Peak Organic and Biodynamic Estate Grappas. In 2011, Peak Spirits sourced ingredients from just 3 growers, all located within a 10-mile radius of the distillery and all either USDA-certified organic or Demeter Biodynamic®.

Rose, lavendar

THL: How should you drink it?

Six89 Restaurant in Carbondale, Colorado makes the How Word, Hughes with Caprock Organic Gin, lemon verbena simple syrup, muddled lemon and a twist and sprig of mint. The sweetness and herbs of this cocktail balance the spirit's sweetness.
