THL: What is it?
Balcones Distillery Baby Blue Whiskey is made from 100% artisanal Hopi blue corn, with an unusually nutty flavor that makes for a whiskey that is truly one of a kind.
THL: Why should you try it?
It is a young whiskey that has just enough age to be able to blindly distinguish it from a white (or un-aged) whiskey. The whiskey is similar to a bourbon, but the flavor is feisty. The distillers strove to retain the complex character of the Hopi blue corn. The blue corn is roasted before fermentation, which allows the corn to come through in the smooth caramel flavor.
A lifelong passion for fermentation and beer brewing led the distillers at Balcones to leverage their brewing experience to make original, flavorful, hand-crafted whiskeys.
THL: Who makes it?
Balcones is the first (legally) available whiskey coming out of Texas, and they are the only distillers in the world to use uniquely flavorful Hopi blue corn.

Spirit education expert Lara Nixon created the Indian Paintbrush cocktail, a delightfully sweet drink that still lets the spirit shine.
1/2 ounce Simple Syrup
1-1/2 ounces Balcones Baby Blue Whiskey
1/2 ounce Galliano Liqueur
1/2 ounce Lime Juice
Add cherries and simple syrup to empty cocktail shaker. Muddle cherries, and then add the remaining ingredients. Fill cocktail shaker with ice, and shake for 15-30 seconds. Strain into chilled cocktail glass.
