It’s not just for shots, Margaritas, and bar-top dancing anymore. Today’s fine tequilas are made of 100% agave. Those who drink lesser products do so at their own (morning after) peril. In fact, the recent popularity of 100% agave plant productions have yielded a growing field of high quality and delicious tequilas—so good, they’re like sipping fine wine. Tequila is made from the agave plant and must be made in one of 5 approved states in Mexico in order to be called tequila. Mezcal (primarily made in Oaxaca, Mexico) is also made from agave, but is roasted and smoked for days or weeks. Agave spirits include anything made from the agave plant but aren’t made in the Mexican tequila or mezcal states.
