This is one I first learned at Barolo Grill, an Italian restaurant in Denver. The Irish bartender Ryan O'Brien learned it from the Italian bartender Lenny Bortolotto, and people have been requesting “that yummy sparkling drink in the big wine glass” for years since. Aperol is an Italian aperitif very similar to Campari, but a little sweeter and not quite as high in alcohol...all the cool kids in Italy drink this on warm evenings before dinner, to celebrate life and wake up their taste buds.
