THL: What are your other gigs and interests?

Like so many of us in this industry, almost too many to list! I'm the brand ambassador for Lucas Bols in New York and spend much of my time each week teaching fellow bartenders about Genever and Galliano. I co-own a bar called The Drink in Williamsburg, Brooklyn and am soon to open Bourgeois Pig Brooklyn in Carroll Gardens, Brooklyn.

THL: What is something that best represents your personality?

The TV show, It's Always Sunny in Philadelphia.

THL: What is your bartending style?

Technical and obsessive, fast and furious.

THL: How do you find inspiration for new cocktails and recipes?

Old cocktail books. Friends and fellow bartenders who are 10 times better than me. Chefs and food in general.

THL: Besides bartending, what things do you do well?

Annoy the hell out of people.

THL: Ever had any strange customer requests while bartending?

Honestly, somewhat recently a fine young lady requested a Vodka Gimlet, then asked for a Belvedere Vodka Gimlet, then changed her order to a totally out-of-left-field Bols Genever Gimlet. I try to separate my time behind the bar from my time representing my brand, but I couldn't help but ask how she arrived at asking for something relatively flavorless to what many consider a challenging spirit. It was interesting.

THL: What is your favorite after-shift drink?

Pilsner, shots of rum, Fernet, applejack.

THL: What is the one thing you can’t live without from your home liquor cabinet?

Good rum and good whiskey. I mix the former and sip the latter.

THL: What is the most underrated cocktail?

The Daiquiri. It's the most brilliant cocktail, like simple things often are.

THL: What is the test of a great bartender?

Patience.
